Is there anything worse than cooking on the hottest day of the year?  And then to add insult to injury, whilst half heartedly perusing your fridge, looking for something–anything that will make your life easier, and you realize your favourite lazy day condiment is nearly run out?! Fear not friend, this salad is here to solves all your problems.

Ingredients

  • 100g feta
  • 2 tablespoons Smokin’ Hot Chili Crisp
  • ½ baby watermelon
  • 3 baby cucumbers
  • 10 cherry tomatoes
  • pinch salt
  • handful of your favourite fresh herbs (mint, basil + dill work particularly well here)

Directions

  1. Chop feta + add to nearly empty jar of chili crisp. Give it a good shake.
  2. Chop all your fruits + vegetables.
  3. Arrange on your plate.
  4. Season with salt.
  5. Drizzle over your feta and any remaining chili crisp.
  6. Garnish with your favourite herbs.
